I am nibbling on warm peach cobbler, baked fresh this morning, with a double scoop of French Vanilla Bean ice cream while clicking away at the keyboard, trying to think of the right words to explain just how delicious this is. Instead of using fresh peaches; I was worried the peaches presently in the stores were not the best for flavor and ripeness, canned peaches from last summer's trip to Eastern Washington were used. The peaches were canned at peak ripeness and a low sugar simple syrup was used. I only added 2 Tablespoons of sugar to the recipe instead of 3/4 cup. Life has been crazy busy because my only little girl just graduated high school. I took 2 days off from work to prepare for her graduation party on Saturday. The graduation ceremony was held last Friday night. Can you believe almost 600 students graduated and the ceremony took less then 2 hours? The Tacoma dome in Tacoma, WA was packed with family and friends.
I will blog my breakfast and BBQ menu later this week because I want the posting to be all about the yummy cobbler =). Sweet Melissa Sundays is such a wonderful group and I started last week's Bee Sting buns, made the actual bun dough then froze it till I could get the time to finish them. I felt so bad about not finishing the buns on time that I did not blog how far I had gotten. For that, I apologize because I did do the happy dance for being accepted as part of the baking party. Andrea of Nummy Kitchen chose this week's recipe and a BIG blog hug is being sent your way! Fabulous choice! I try not to alter a recipe too much because then I'm worried about changing the chef's intent for flavor but I did add a smidgen of nutmeg, made individual dessert servings and cut the dough into little hearts into of a large, single piece topping. My baking time ended up being only 45 minutes.
I was thinking about buying a photo printer and printing pictures out for each recipe baked from a recipe, showing how I made the recipe my own (just a little), and how the recipe turned out for me. Kind of like a record. So many of us cook and bake hundreds of recipes in a years time and can not remember how we made something a month ago (even with notes printed around the recipe page). Maybe the idea is silly...I am still thinking about it.
Bear's peach cobbler is a recipe I would bake again and I have a peach cobbler recipe my family already swears by. I would never type that statement out loud if I didn't mean it. Very tasty! Making one single dessert would have been to hard to eat all by ourselves so the individual desserts can now be shared with friends. Wanting to share great food is one of the biggest compliments that can be offered and this recipe deserves the compliment. Thank you!
